I have a confession to make….. I’ve kinda “relapsed” on my Meatless Monday journey. Relapse might be too strong of a word, how about we say I’ve tripped or have had a setback. How did this happen? Well first of all I did not plan ahead. I honestly think that planing ahead is the greatest tool a person can have in their healthy eating quest. My successful days are mostly attributed to me planning ahead the night and even days before. This past week I failed to plan ahead which means I planned to fail. (Have you ever heard of the quote:

“He who fails to plan is planning to fail”- Winston Churchill

Plan, Plan, and Plan
Plan, Plan, and Plan

The second thing that threw me off my course was a change in schedule. My supervisor is away on vacation so I’ve been working extra hours and filling in for her. Mondays are usually my refresh, planning, and personal day but I wasn’t able to do that. Then there’s also finals, the change in weather and all the other things that life usually throws.

The most important thing about setbacks or trips is how you get up and react to it. Its important to look forward and plan your next step! I’m not going to let my little set back send me in a downward spiral. If you’ve had setbacks in your healthy eating quest don’t beat yourself about it. Just remember chin up and move on!

Are spiraling down these stairs or are you going up?

Until next time…..

  • Happy World Vegan Day!!! Today's lunch rice, chickpeas (channa) with spicy okra. The cucumbers and tomatoes don't really match the dish but I needed them to help balance out. The spice. Channa or chickpeas are a great source of plant based protein. πŸ‡
